Carrot Cake Overnight Oats

We are loving these overnight oats because my children are old enough that they can grab it out of the fridge and feed themselves breakfast! It's amazing to get a little more me time in the morning!

When you are finished with this recipe, be sure to head over to this Banana Walnut Overnight Oats recipe because it's just a good! It's a bit more simple because you don't have to grate carrots.

Soaking your oats and nuts helps to break down the phytic acid naturally found in these foods. This is helpful because it allows your body to better absorb minerals like zinc, magnesium and calcium.

Enough with the science though, let's get to the recipe! I like to add a little extra shredded carrots and pecans before digging in to garnish.
