Cooking With Oils: Peppermint Brownies

The first time my sister-in-law tasted these brownies, she welcomed me into the family. I won her over with these brownies, so they have got to be great, right? Although the ones I fed her had Resse's Peanut Butter cups pressed into the top of the batter before baking, the recipe itself is the same! They are moist, chocolate-y and now they have Peppermint Essential Oil!

If you decide to use Peppermint Essential Oil in your food, or any essential oil, they need to be CPTG, or Certified Pure Therapeutic Grade. Are they healthy?

Heck no! They have flour, gluten, lots of sugar and butter but, for the occasional celebration, they are a crowd pleaser! 

Peppermint Brownies


1 cup melted Butter
1 cup Cocoa
2 cups Sugar
4 Eggs
1 teaspoon Vanilla
2 drops Peppermint Essential Oil (no more than 2)
1 1/3 cup Flour
1/2 teaspoon Baking Soda
1/2 teaspoon Sea Salt

  1. Preheat oven to 350F. Grease 9x13" baking dish.
  2. In your stand mixer bowl, combine melted butter, cocoa, sugar, eggs, vanilla and essential oils.
  3. Add flour, baking soda, & sea salt and mix until combined.
  4. OPTIONAL | Add a cup of desired nuts or chocolate chips.
  5. Pour batter into greased baking dish and bake for 35 minutes or until cooked through.
