Zucchini is my favourite vegetable. I never really knew I liked zucchini so much until the last year or so. I like it baked, roasted and in dessert breads! So when I found a giant zucchini at the market this week for $2.75, I went cray-cray for zucchini recipes!
The recipe I want to share today is quick, easy and only dirties one bowl, my kind of recipe! It also can be made with ingredients you probably already have at home and since we are on a journey to self sufficiency, it's perfect. There's nothing more disappointing when you find a great recipe to find you'll have to run out to the market before you can start!
First, you need to remove the seeds, shred your zucchini and drain it so your recipes don't end up soggy. This recipe calls for 1.5 cups of shredded zucchini, so go ahead and place the rest in the fridge or divide into 2 cup bags for the freezer for later.
Tip! Place your colander inside a bowl to catch the extra water!
Delicious Zucchini Cheese Bites!
1.5 cups of shredded zucchini
1/2 cup shredded cheese
1/4 cup panko bread crumbs
4 fresh basil leaves
1/4 tsp garlic powder
Salt and Pepper
1) Combine all ingredients into one bowl!
2) Spoon onto baking sheet lined with parchment paper and press down with the back of the spoon to form bites.
4) Bake for 14 minutes or until crispy on the edges.
